How to make it

  • Put oven rack in middle position and preheat oven to 350°F. Lightly grease 2 individual ramekins.
  • Melt chocolate and butter in a metal bowl set over a saucepan of barely simmering water, stirring until smooth.
  • Remove bowl from heat, add applesauce.
  • Stir well and cool 5 minutes.
  • Whisk in egg yolk and a pinch of salt until combined.
  • Beat egg white until it holds soft peaks.
  • Gradually add sugar, and continue to beat until white is stiff and glossy.
  • Whisk about one fourth of the white into chocolate mixture.
  • Fold in remaining white gently but thoroughly.
  • Pour into ramekins. Cover each with foil and crimp tightly around rim.
  • Put ramekins in a water bath, making sure that foil is above water.
  • Bake 30 minutes. (Puddings will be gooey to the touch.)
  • Transfer to a rack and cool puddings, uncovered, about 1 hour.
  • Just before serving, un-mould puddings into serving bowls.
