How to make it

  • Preheat oven to 500.
  • Remove giblets and neck from goose.
  • First you need to remove excess fat from main cavity of goose.
  • Then you can rinse out goose inside and out with cold water.
  • Now pat dry with paper towels.
  • Then you need to add the thyme, rosemary, salt and pepper in small bowl.
  • Now add put goose, breast side down on a rack in a roasting pan.
  • Then sprinkle goose with about half of your herb mixture.
  • Now you can put orange and lime wedges in cavity of goose.
  • Now turn your goose so that breast side is up.
  • Then sprinkle remaining herbs over goose.
  • You need to roast goose 1 hour.
  • Now you can turn off oven (do not open oven door) and let goose stand in oven approx. more 45 minutes. Juices should run clear.
  • Then take out goose from oven; cover and let rest 10 minutes.
  • Serve.
