Citrus Goose

- 1 (11 1/2 lb) thawed geese shopping list
- 1 cut up orange shopping list
- 1 cut up lime shopping list
- 1 tbsp. of chopped fresh thyme shopping list
- 1 tbsp. of chopped fresh rosemary shopping list
- 2 tsp. of salt shopping list
- 1 tsp. of pepper shopping list
How to make it
- Preheat oven to 500.
- Remove giblets and neck from goose.
- First you need to remove excess fat from main cavity of goose.
- Then you can rinse out goose inside and out with cold water.
- Now pat dry with paper towels.
- Then you need to add the thyme, rosemary, salt and pepper in small bowl.
- Now add put goose, breast side down on a rack in a roasting pan.
- Then sprinkle goose with about half of your herb mixture.
- Now you can put orange and lime wedges in cavity of goose.
- Now turn your goose so that breast side is up.
- Then sprinkle remaining herbs over goose.
- You need to roast goose 1 hour.
- Now you can turn off oven (do not open oven door) and let goose stand in oven approx. more 45 minutes. Juices should run clear.
- Then take out goose from oven; cover and let rest 10 minutes.
- Serve.
