Ingredients
  • 1 cups white flour
  • ¾ cup whole wheat flour
  • ¼ cup brown rice flour
  • ¼ cup brown sugar
  • 1/8 tsp salt
  • 1 tsp cornstarch
  • 1 tbsp baking powder
  • ½ cup Soy or coconut milk
  • ½ cup apple juice
  • ¼ cup Applesauce (or apple-pineapple sauce)
  • 1 large banana, mashed
  • ½ cup shredded, unsweetened coconut
  • ½ cup mini chocolate chips

Directions
  1. Preheat the oven to 500°F
  2. Blend together the flours, sugar, salt, cornstarch and baking powder.
  3. Beat the milk, applesauce and banana separately.
  4. Add wet ingredients to the dry mixture, stir lightly to slightly mix.
  5. Add the coconut and chocolate chips, stir just to incorporate. Lumps are OK!
  6. Pour batter into cups of a greased muffin tin.
  7. Place the muffins in the oven, and immediately drop the temperature to 400°F.
  8. Bake for 15- 20 minutes.
