Ingredients
  • Topping:
  • 3 T butter
  • 1/2 C brown sugar
  • pineapple slices
  • marschino cherries
  • Cake:
  • 1 egg
  • 1/2 C sugar
  • 1 C flour
  • 1 t baking powder
  • 1/4 C milk
  • 1 T veg. oil
  • 1 t vanilla

Directions
  1. Preheat oven to 350*.
  2. For topping:
  3. Melt butter in pan.
  4. Add brown sugar and stir until melted.
  5. Let cool while mixing batter.
  6. For cake:
  7. Beat egg until light.
  8. Add sugar and beat well.
  9. Mix baking powder and flour, add alternately with milk.
  10. Place pineapples in pan on melted brown sugar in single layer.
  11. Put 1 cherry in the hole of each pineapple slice.
  12. Pour cake batter over pineapples.
  13. Bake at 350* for about 30 min.
  14. After cake is cool, turn out on a lg. cutting board, baking sheet, or serving tray, so that you can see how pretty your cake is.
  15. This is the same recipe for our cobblers. Just pour cake batter over blueberries, cherries, blackberries, etc. after sprinkling with sugar to taste.
