Layered Mexican Dip

- 1 16 oz. can spicy refried beans shopping list
- 2 ripe avacados shopping list
- 16 oz. sour cream, divided shopping list
- 2 T. salsa shopping list
- 2 T. minced onions shopping list
- 1 T. lemon juice shopping list
- 8 oz shredded cheddar or mexican cheese shopping list
- 2 tomatoes, diced shopping list
- 6 scallions, chopped shopping list
- sliced black olives, optional shopping list
How to make it
- Layer in the bottom of 13x9 in. pan, or divide between 2 pie plates, the can of refried beans.
- Make guacamole by mashing with a fork the 2 avacados with the salsa, onion, lemon juice, and 1/4 c. sour cream.
- Spread guacamole over the bean layer.
- Spread remainder of sour cream over guacamole layer.
- Sprinkle cheese layer over sour cream layer.
- Sprinkle tomatoes and then scallions over cheese. Olives too, if using.
- Cover and chill before serving.
- Serve with tortilla chips or veggies.
