Smoked Corn Relish

So easy....Smoke this while you're smoking your meats! Colorful topping for pork and chicken, topped with a dollop of sour cream. Or just plank it on the table in a pretty bowl! Adds instant pizzaz to the table!
Ingredients
- 6 cups fresh sweet corn, cut from the cob shopping list
- 4 cups fresh tomatoes, peeled and diced shopping list
- 1 or 2 yellow onions, diced shopping list
- 4 fresh jalapeno peppers, minced shopping list
- 1 red onion, diced shopping list
How to make it
- Combine all in a baking pan
- Place in smoker
- Stir occasionally
- Smoke away!
