Cranberry Pumpkin Muffins Recipe

Ingredients
  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon pumpkin pie spice
  • 1/2 teaspoon salt
  • 2 eggs
  • 2 cups sugar
  • 1 cup canned pumpkin
  • 1/2 cup vegetable oil
  • 1 cup fresh or frozen cranberries, chopped

Directions
  1. In a bowl, combine the first four ingredients.
  2. In a mixing bowl, beat the eggs and sugar; add the pumpkin and oil and mix well.
  3. Stir into the dry ingredients just until moistened.
  4. Fold in the cranberries.
  5. Fill foil-or paper-lined muffin cups three-fourths full.
  6. Bake at 400 degrees F for 18-22 minutes or until a toothpick comes out clean.
  7. Cool for 5 minutes before removing from pans to wire racks.

These look delicious! I'm saving to try later. I bet these are really moist with the pumpkin, and you can't go wrong with cranberries! You have my five - thanks!


Made them today and they are delicious! The cranberries make them extra yummy. I did cut the sugar from 2 c to 1-1/2 c and my grown son and husband still thought them greaaaaaat.
