Found this online and changed it a bit to fit my taste. I was amazed how much it taste just like egg salad.

Ingredients
  • Soft tofu
  • soy mayonnaise (you can make this yourself)
  • dijon mustard (i like the whole grain)
  • cayenne
  • cumin
  • a crunchy green vegetable (sprouts, celery, cucumber)
  • a leafy green
  • bread of choice

Directions
  1. Put the soft tofu into some sort of mixing bowl
  2. Add 3 tbs of the soy mayonnaise
  3. Add 1 tbs of the mustard
  4. Add as much cumin and cayenne as you like
  5. If you are using celery, chop it up finely and toss it in the bowl
  6. Mash them all together with a mashing device (fork)
  7. Take your bread of choice and top it with your mixture.
  8. Then if using cucumber or sprouts place them on top.
