Bacon Wrapped Grilled Dove Breasts Recipe
Sept 1 is the beginning if hunting season I have to be ready to prepare everyones harvest in the field. Smoked Dove breasts with serano pepper and water chestnut wrapped in Bacon

Ingredients
  • 30 to 100 fresh dove breasts clean soaked in saltwater
  • Store bought Chicken breasts have and can be used.
  • I large can Serrano Peppers cut in half seeds removed
  • 2 pounds bacon prefer thick slice peppered
  • 2 cans water chestnuts opened and cut in halfs or quarters
  • 1 box tooth picks round
  • Salt , pepper, garlic powder

Directions
  1. A smoker is best on a good fire around 300 degrees (no direct flame)
  2. Each breast is filet off the breast bone placed in salt water mixture 3 table spoonful salt in a large bowl allow to stand while you get everything ready then drain.
  3. Lightly Season the drained breasts with salt , pepper, garlic and mix in the bowl
  4. Place bacon strips on a prep surface or large cutting board
  5. Take two filets place the on a bacon strip with one pepper halve and a water chestnut strip
  6. Roll these in a strip of bacon and secure with a round tooth pick
  7. If the hunting was good there will be 100 , 30 if your friends cannot shoot
  8. Place all of these in the smoker, sit back with a cool drink and visit with your friends for 2 hours while they smoke. Savor friends and smoke filled air.
  9. Bacon should be slightly crisp when these are ready.
  10. Bobby usually makes our Camp Potatoes in foil placed in the heat end of the smoker they take about two hours also, I will post these Bobby's Famous Camp Potatos later.

Oh man i wish you could shoot me some doves! i don't think they're indigenous to the chesapeake bay region of virginia, i'd love to try some.


Well come on down to Texas the season is on.
Dove are in your area!! They migrate to South America each year to reproduce in Cancun and Argentina.
It is strange they only live two seasons on their return to South America they life is over they expire. So when we harvest them they were already committed.
