Pear And Almond Cake With Passionfruit Glaze

- 185g butter[a bit over 3/4 of cup] shopping list
- 1/2 cup[110 g] caster sugar shopping list
- 3 eggs shopping list
- 11/2 cups[180 g] almond meal shopping list
- 1/4 cup[35g] pl flour shopping list
- 420g can pear halves in naturaljuice,drained.. shopping list
- PASSIONFRUIT glaze shopping list
- 1/3 cup passionfruit pulp shopping list
- 1/3 cup light corn syrup shopping list
- 1 tbls.caster sugar shopping list
How to make it
- Make passionfruit glaze
- preheat oven to moderately slow [170c/150c fanforced].Grease 22 cm springform tin;line base & side with baking paper.
- Beat butter and sugar in medium bowl with electric mixer til' light & fluffy. Add eggs,one at a time,beating until combined between each.Stir in almond meal and flour.
- Spread mixture into pan;top with pear halves.Bake about 50 mins.Stand cake 5 mins.then turn cake,top side up,onto wire rack.Pour passionfruit glaze over cake.
- PASSIONFRUIT GLAZE
- Stir ingredients in small saucepan over heat without boiling,til' sugar dissolves.Bring to the boil;reduce heat.Simmer,uncovered,without stirring,about 2 mins. or until thickened slightly;cool.
