Pear And Almond Cake With Passionfruit Glaze Recipe

Ingredients
  • 185g butter[a bit over 3/4 of cup]
  • 1/2 cup[110 g] caster sugar
  • 3 eggs
  • 11/2 cups[180 g] almond meal
  • 1/4 cup[35g] pl flour
  • 420g can pear halves in naturaljuice,drained..
  • PASSIONFRUIT GLAZE
  • 1/3 cup passionfruit pulp
  • 1/3 cup light corn syrup
  • 1 tbls.caster sugar

Directions
  1. Make passionfruit glaze
  2. preheat oven to moderately slow [170c/150c fanforced].Grease 22 cm springform tin;line base & side with baking paper.
  3. Beat butter and sugar in medium bowl with electric mixer til' light & fluffy. Add eggs,one at a time,beating until combined between each.Stir in almond meal and flour.
  4. Spread mixture into pan;top with pear halves.Bake about 50 mins.Stand cake 5 mins.then turn cake,top side up,onto wire rack.Pour passionfruit glaze over cake.
  5. PASSIONFRUIT GLAZE
  6. Stir ingredients in small saucepan over heat without boiling,til' sugar dissolves.Bring to the boil;reduce heat.Simmer,uncovered,without stirring,about 2 mins. or until thickened slightly;cool.
  7. 27g total fat
