Senegalese Soup Recipe
Otherwise known as cold curry soup, this is a standout for fancy picnics or any meals served "on the lawn." It's also a good way to use leftover chicken.

Ingredients
  • 1 1/2 Tbsp cornstarch
  • 1 1/2 tsp curry powder
  • 1 1/2 c rich chicken broth
  • 1 1/2 c cream, room temperature
  • 1/2 c diced cooked chicken

Directions
  1. Put the cornstarch and curry in a saucepan, then add the cold broth.
  2. Stir the poder into the broth while still cold, then heat the soup until just beginning to boil.
  3. Remove from the heat, and blend in the cream.
  4. Set aside to cool to room temperature, then chill thoroughly.
  5. Stir in the diced chicken and serve chilled.
