How to make it

  • Pre-heat Broiler.
  • In a bowl, whisk together sauce ingredients and set aside.
  • In a bowl, combine mayonnaise, lime juice, chili powder and ground red pepper.
  • Place chicken breasts on the rack of the broiler pan and brush with 1/2 of the mayonnaise mixture.
  • Place about 5-7 inches from heat and broil for 7-9 minutes.
  • Turn chicken over and brush with remaining mayonnaise mixture.
  • Broil 7-9 minutes more, until the chicken is no longer pink.
  • To serve:
  • Spread the sauce on each roll.
  • Place a lettuce leaf on each roll.
  • Put 2 slices of monterey jack cheese on top of lettuce.
  • Put chicken breast on top of cheese.
  • Place roll tops on top of chicken breast.
  • **Note: If desired, you can melt the cheese on top of the chicken breasts during the last 2 minutes of cooking, but that can get messy**
