Monterey South Of The Border Chicken Sandwich Recipe
These are on my top ten list of favorite sandwiches. Better than a plain old chicken sandwich, these are packed full of flavor.

Ingredients
  • Sauce:
  • 1/2 cup mayonnaise, don't use reduced fat, too runny
  • 1/4 cup sun-dried tomatoes packed in oil, drained and chopped
  • 1/2 teaspoon ground cumin
  • Sandwich:
  • 4 boneless, skinless chicken breast halves
  • 1/2 cup mayonnaise
  • 1 tablespoon lime juice
  • 1 teaspoon chili powder
  • 1/2 teaspoon ground red pepper
  • 4-6 inch sandwich rolls, halved lengthwise
  • 4 crisp, clean lettuce leaves
  • 8 slices monterey jack cheese

Directions
  1. Pre-heat Broiler.
  2. In a bowl, whisk together sauce ingredients and set aside.
  3. In a bowl, combine mayonnaise, lime juice, chili powder and ground red pepper.
  4. Place chicken breasts on the rack of the broiler pan and brush with 1/2 of the mayonnaise mixture.
  5. Place about 5-7 inches from heat and broil for 7-9 minutes.
  6. Turn chicken over and brush with remaining mayonnaise mixture.
  7. Broil 7-9 minutes more, until the chicken is no longer pink.
  8. To serve:
  9. Spread the sauce on each roll.
  10. Place a lettuce leaf on each roll.
  11. Put 2 slices of monterey jack cheese on top of lettuce.
  12. Put chicken breast on top of cheese.
  13. Place roll tops on top of chicken breast.
  14. **Note: If desired, you can melt the cheese on top of the chicken breasts during the last 2 minutes of cooking, but that can get messy**
