Monterey South of the Border Chicken Sandwich

- Sauce: shopping list
- 1/2 cup mayonnaise, don't use reduced fat, too runny shopping list
- 1/4 cup sun-dried tomatoes packed in oil, drained and chopped shopping list
- 1/2 teaspoon ground cumin shopping list
- Sandwich: shopping list
- 4 boneless, skinless chicken breast halves shopping list
- 1/2 cup mayonnaise shopping list
- 1 tablespoon lime juice shopping list
- 1 teaspoon chili powder shopping list
- 1/2 teaspoon ground red pepper shopping list
- 4-6 inch sandwich rolls, halved lengthwise shopping list
- 4 crisp, clean lettuce leaves shopping list
- 8 slices monterey jack cheese shopping list
How to make it
- Pre-heat Broiler.
- In a bowl, whisk together sauce ingredients and set aside.
- In a bowl, combine mayonnaise, lime juice, chili powder and ground red pepper.
- Place chicken breasts on the rack of the broiler pan and brush with 1/2 of the mayonnaise mixture.
- Place about 5-7 inches from heat and broil for 7-9 minutes.
- Turn chicken over and brush with remaining mayonnaise mixture.
- Broil 7-9 minutes more, until the chicken is no longer pink.
- To serve:
- Spread the sauce on each roll.
- Place a lettuce leaf on each roll.
- Put 2 slices of monterey jack cheese on top of lettuce.
- Put chicken breast on top of cheese.
- Place roll tops on top of chicken breast.
- **Note: If desired, you can melt the cheese on top of the chicken breasts during the last 2 minutes of cooking, but that can get messy**
