Ingredients
  • 1/2 cup plus 1 tablespoon corn meal
  • 1 and 1/2 cups all purpose flour
  • 1 tablespoon baking powder
  • 1/2 tablespoon salt (optional for low salt diets)
  • 3/4 cups milk
  • 1/4 cup vegetable oil (can use sunflower or canola )
  • 1 12 oz jar or 1and 1/2 cups taco sauce
  • 1 15oz can mexican style chili beans undrained
  • 1 red or green bell pepper cut into thin rings
  • 8 oz or 2 cups shredded monterey jack or mexican blend cheese

Directions
  1. heat oven to 450 degrees
  2. grease 14 inch round pizza pan or 15 by 10 jelly roll pan
  3. Sprinkle the 1 tablespoon of corn meal evenly in prepared pan
  4. Combine the 1/2 cup corn meal, flour,baking powder and salt
  5. add milk and oil stir with fork until mixtue forms a ball
  6. press dough into prepared pan shaping the edge to form a rim
  7. bake 15 minutes and remove from oven
  8. top crust with taco sauce spread evenly over the crust
  9. next add the undrained can of beans,pepper rings, and cheese
  10. bake an addditonal 10 minutes or until cheese is nicely melted.
  11. Wonderful with a nice fresh salad !
