Chocolate Zucchini Loaf

- 2 c chopped zucchini shopping list
- 1 c canola oil shopping list
- 3 eggs shopping list
- 2 tsp vanilla shopping list
- 3 c flour shopping list
- 2 c sugar shopping list
- 1/2 c cocoa powder shopping list
- 1 tsp each baking soda and baking powder shopping list
- Glaze: shopping list
- 2 c icing sugar shopping list
- 1/2 c cocoa shopping list
- enough milk to form a thick glaze shopping list
How to make it
- In a blender mix the zucchini, oil, eggs,and vanilla
- In separate bowl combine flour, sugar, cocoa, baking powder and baking soda.
- Pour wet ingredients into dry, stir to mix.
- Pour into 2 greased 9x5 loaf pans.
- Bake at 325 for 50-60 minutes. Remove to rack to cool.
- Glaze when cooled.
