Barley Pilaf With Mushrooms Recipe

Ingredients

1 Tbs. plus 1 tsp. olive oil

2 cups onion, chopped

1/2 lb. mushrooms, thinly sliced

1 bay leaf

1 cup pearl barley

2 cups chicken or vegetable broth

3 Tbs. fresh parsley, minced

Directions

Heat oil in a heavy saucepan over medium heat. Sauté onion,

mushrooms and bay leaf 5 minutes, stirring, until onion is

softened. Stir in barley, water and salt and pepper to taste. Bring to

a boil. Reduce heat to low, cover pan and simmer 30-35 minutes, or

until liquid is absorbed and barley is tender. Discard bay leaf and

stir in parsley. Fluff with a fork before serving

Looks good, but would it need more liquid? The usual ratio I've seen is 1:3 barley:broth. (I usually have used barley in soups and am looking to expand my repertoire, so don't have direct experience using it for pilaf.)
