Barley Pilaf With Mushrooms Recipe
found this in an old news paper and tried it last winter.. it has become my favorite comfort food!

Ingredients
  • Ingredients
  • 1 Tbs. plus 1 tsp. olive oil
  • 2 cups onion, chopped
  • 1/2 lb. mushrooms, thinly sliced
  • 1 bay leaf
  • 1 cup pearl barley
  • 2 cups chicken or vegetable broth
  • 3 Tbs. fresh parsley, minced

Directions
  1. Heat oil in a heavy saucepan over medium heat. Sauté onion,
  2. mushrooms and bay leaf 5 minutes, stirring, until onion is
  3. softened. Stir in barley, water and salt and pepper to taste. Bring to
  4. a boil. Reduce heat to low, cover pan and simmer 30-35 minutes, or
  5. until liquid is absorbed and barley is tender. Discard bay leaf and
  6. stir in parsley. Fluff with a fork before serving

Looks good, but would it need more liquid? The usual ratio I've seen is 1:3 barley:broth. (I usually have used barley in soups and am looking to expand my repertoire, so don't have direct experience using it for pilaf.)
