Barley Pilaf with Mushrooms

- Ingredients shopping list
- 1 Tbs. plus 1 tsp. olive oil shopping list
- 2 cups onion, chopped shopping list
- 1/2 lb. mushrooms, thinly sliced shopping list
- 1 bay leaf shopping list
- 1 cup pearl barley shopping list
- 2 cups chicken or vegetable broth shopping list
- 3 Tbs. fresh parsley, minced shopping list
How to make it
- Heat oil in a heavy saucepan over medium heat. Sauté onion,
- mushrooms and bay leaf 5 minutes, stirring, until onion is
- softened. Stir in barley, water and salt and pepper to taste. Bring to
- a boil. Reduce heat to low, cover pan and simmer 30-35 minutes, or
- until liquid is absorbed and barley is tender. Discard bay leaf and
- stir in parsley. Fluff with a fork before serving
