Tex Mex Waffles Recipe
Not your usual waffle. This is a savory waffle that is good for breakfast, brunch, lunch or dinner. I wrote this recipe a few years ago when I decided to try savory waffles. Hope you like my concoction of some of my favorite ingredients.

Ingredients
  • 1-1/2 cups all-purpose flour
  • 1/2 cup yellow cornmeal
  • 1-1/3 cups grated sharp cheddar cheese
  • 1 tablespoon baking powder
  • 2 teaspoons sugar
  • 1/2 teaspoon salt
  • 1 teaspoon mild chili powder
  • 1-2/3 cups milk
  • 2 eggs lightly beaten
  • 1/3 cup vegetable oil
  • 2 tablespoons finely chopped green chilies

Directions
  1. Preheat waffle maker.
  2. In a large bowl combine flour, cornmeal, cheese, baking powder, sugar, salt and chili powder then add milk, eggs, vegetable oil and chilies and mix just until moistened.
  3. Mixture may be a little lumpy.
  4. Bake in preheated waffle maker then serve with your favorite salsa, sour cream and additional grated cheese.

Very nice and quite good under fried chicken!!


Amazing. My boyfriend loves them. I added bacon to them as well.

Alterations


Haven't tried it yet, but sounds like something I would dig. Have you thought of adding a shredded veggie, like potato or zucchini and onions? It would make it less breakfast-like and more savory. I'm going to give it a shot and let you know how it turns out.
