Crispy Pretzal Chicken Recipe
This is a different twist on baked chicken. It's actually quite tasty as a sandwich or topped with diced tomatoes and sauteed yellow squash!

Ingredients
  • 1/4 cup butter, melted
  • 2 Tbsp. prepared horseradish or mustard
  • 1/8 tsp. hot pepper sauce
  • 1 cup finely crushed pretzel sticks
  • 2 Tbsp. flour
  • 2 Tbsp. chopped fresh parsley
  • 4 boneless, skinless chicken breasts
  • 1 med. tomato, diced
  • 1 med yellow squash, sliced thin
  • 1/4 cup butter

Directions
  1. Combine butter, horseradish or mustard, and hot pepper sauce in shallow pan.
  2. Mix crushed pretzels, flour and parsley in another dish.
  3. Dip boneless, skinless chicken breasts into butter mixture, then roll in crushed pretzel mixture to coat.
  4. Bake at 400 degrees F for 18-24 minutes
  5. Meanwhile, saute squash in butter, sprinkle with salt and pepper. Serve on top of pretzal chicken, then top with diced tomatoes
