Pineapple Carrot Cake

- 2 cups all-purpose flour shopping list
- 2 cups sugar shopping list
- 2 tsp baking soda shopping list
- 2 tsp ground cinnamon shopping list
- 1 tsp salt shopping list
- 1 1/2 cups vegetable oil shopping list
- 4 eggs shopping list
- 2 jars (6 oz each) carrot baby food shopping list
- 1 can (8 oz) crushed pineapple, drained shopping list
- 1/2 cup chopped walnuts shopping list
- Frosting: shopping list
- 1 8 oz package cream cheese, softened shopping list
- 1/2 cup butter, softened shopping list
- 1 tsp vanilla shopping list
- 3 3/4 cups confectioners' sugar shopping list
- Additional chopped walnuts, optional shopping list
How to make it
- In a mixing bowl, combine the dry ingredients. Add the oil, eggs and baby food; mix on low speed until well blended. Stir in pineapple and nuts. Pour into two greased and floured 9-in. round baking pans. Bake at 350 for 35-40 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes before removing from pans to wire racks to cool completely.
