Glazed Plantains Recipe
If you like plaintains give these a try. They are easy yet bursting with flavors. I have never made these but my neighbor does and we eat them over ice cream. Yummilicious.

Ingredients
  • 2 ripe plantains peeled
  • 1/2 teaspoon ground cinnamon
  • 1 tablespoon canola oil
  • 4 tablespoons sugar
  • 4 tablespoons pineapple juice
  • Whipped topping

Directions
  1. Slice plantains diagonally 1/4" thick and sprinkle with cinnamon.
  2. Cook in hot oil over medium heat turning often until lightly browned about 8 minutes.
  3. Sprinkle with sugar then add juice and reduce heat to low.
  4. Cook turning often until plantains are golden about 5 minutes.
  5. Top with whipped topping.

Alterations


I changed this recipe based on the ingredients that I had on hand. I used the 2 plantains, cinnamon and OLIVE oil. After browning, I sprinkled with 2-3 tsp. of granulated brown sugar and juice of one lime. Cook about 8 min. Delish!
