This recipe came from an estate sale. I obtained it when I purchased the family collection from the Malin Estate in Caddo Mills, Texas in 1995.

Ingredients
  • 4 ounces vegetable oil
  • 1 large onion, diced
  • 1 tablespoon grated root ginger
  • 1 tablespoon finely chopped garlic
  • 2 tomatoes diced
  • 1 pound lean minced beef
  • 1-teaspoon salt
  • 3 eggs beaten
  • 1-tablespoon turmeric
  • 1-tablespoon butter with 1 tablespoon chopped parsley
  • 8 ounces grated cheddar cheese

Directions
  1. Heat oil in pan and sauté onion until golden.
  2. Stir in ginger, garlic, tomatoes, minced beef and salt.
  3. Cook for 20 minutes, stirring regularly to prevent burning.
  4. Combine eggs with mixture in pan and cook 10 minutes.
  5. Remove from heat.
  6. Add turmeric and seasoned butter and top with parsley and cheese.
