Ginger-Orange Stuffed Pears

- 4oz. light block cream cheese, room temperature shopping list
- ¼ cup granulated sugar shopping list
- 1 egg yolk shopping list
- ½ tsp vanilla shopping list
- ½ tbsp grated fresh ginger shopping list
- 1 tbsp finely grated orange peel shopping list
- 4 large, barely ripe red bosc pears shopping list
How to make it
- Preheat oven to 375F.
- Beat until cream cheese until smooth. Gradually beat in sugar until well mixed, then egg yolks and vanilla. Beat well for about a minute. Then sprinkle in orange peel and stir until evenly mixed.
- Slice about a 1-in” cap from top of each pear and discard.
- Trim bottoms of pears so they'll sit flat.
- Using a small spoon, scoop out and discard cores, along with enough pear flesh to create hollows.
- Spoon in cheese mixture.
- Place on a baking sheet.
- Bake in centre of preheated oven 25 to 30 minutes.
- Pears are best eaten the day they're made, if not fresh from the oven.
