Vegan French Toast

- canola oil/Enova Oil/Earth Balance/very light olive oil shopping list
- Home Made bread, a few days old, the stuff you couldn't eat, but is too dry to eat right now! shopping list
- 1/2 block Firm to extra firm tofu shopping list
- 1/2 cup soy milk shopping list
- 1tsp vanilla shopping list
- cinnamon or almond extract, to taste shopping list
- 1/2 cup sugar shopping list
- 1/2 tsp salt shopping list
- Topping of choice (powdered sugar, fruit topping, cinnamon sugar, my vegan cinnabon topping, maple syrup, peanut buttery maple syrup, whipped cream, etc) shopping list
How to make it
- Since you didn't use all the bread you made earlier this week...my daughter was very apprehensive about trying this, as it looked funny to her, but she LOVED it once she tried it (wouldn't share after testing it...haha)
- Take the bread, and break up or slice into 1 inch cubes (these aren't an exact science here, as mine tended to look pretty warped in shape...haha)
- Blend the rest of the ingredients together
- Dip the pieces of bread into the mix
- Use enough oil to cover 1/2 inch on the pan
- Fry them up to a nice golden brown
- The mix is very messy, so try not to have the heat on too high
- Remove from oil when golden brown and top with fav. toppings!
