Mediterranean Pasta With Zucchini Recipe
A one-dish Mediterranean-style meal. Serve with pita bread and fresh pears. Taken from Cooking Light 1999, 5-ingredient, 15-minute book.

Ingredients
  • 8oz penne or ziti pasta, uncooked
  • 1 (14 1/2oz) can diced tomatoes with basil, garlic, and oregano
  • 1 (15oz) can chickpeas, drained
  • 1 medium zucchini, sliced
  • 2T ripe olives, sliced

Directions
  1. Cook pasta according to package directions, omitting salt and fat.
  2. While pasta cooks, combine tomatoes and remaining ingredients in a large skillet; bring to a boil. Reduce heat, simmer, uncovered, 5 minutes.
  3. Spoon tomato mixture over drained pasta.
  4. Serving size: 2 cups; 363 calories; 9% from fat.
