Sweet Potato Casserole Recipe
Delicious, almost like a dessert, but it's a side dish.

Ingredients
  • 4 cups sweet potatoes, peeled and cubed
  • 2 cups white sugar
  • 4 eggs, beaten
  • 3/4 cup margarine, melted
  • 1 cup evaporated milk
  • 1 tsp nutmeg
  • 1 tsp cinnamon
  • 1 cup miniature marshmallows
  • 1 cup flaked coconut
  • 1 1/2 cups crushed cornflakes
  • 1/2 cup brown sugar, packed
  • 1 cup chopped pecans
  • 3/4 cup margarine

Directions
  1. Preheat oven to 400 degrees. Prepare a 9x13 baking dish with butter.
  2. In a large bowl, mash potatoes (if using canned, drain them well) and mix together with eggs, sugar, margarine, evaporated milk, nutmeg, cinnamon, marshmallows, and coconut.
  3. Scoop the mixture into the baking dish. Bake 20 minutes or until tender.
  4. TOPPING: In a small bowl, mix the cornflakes, brown sugar, pecans and remaining margarine. Spread topping over baked casserole. Return to oven and bake an additional 10 minutes.

I had this kind of yummy sweet potato casserole a couple times before and always wondered how to make it. YAY! :)


Sounds so yummy...might be good with some kind of spicy, lime infused poultry, duck or chicken (lime and coconut combo works like magic)
