A frugal meatloaf with a sweet n sour twist. The peaches add a sweet touch and go well with the ground turkey and TVP.

Ingredients
  • ½ pound ground turkey
  • 1 cup reconstituted TVP granules
  • 1 egg
  • ½ cup beef broth
  • ½ cup chopped onion
  • 1 cup soft bread crumbs
  • ½ teaspoon salt
  • 1 tsp pepper
  • 1 (15 oz) can sliced peaches (in water), drained
  • 1 tablespoon beef broth
  • 1 tablespoon ketchup
  • 1/8 cup honey

Directions
  1. Preheat the oven to 350 degrees F.
  2. In a medium bowl, mix together the ground turkey, TVP, egg, broth, onion, bread crumbs, salt and pepper.
  3. Press into a 9 inch pie pan like a crust. Prick all over.
  4. Bake for 25 minutes in the preheated oven.
  5. Remove from oven and pour off any excess fat.
  6. Arrange the sliced peaches over the pie.
  7. Mix together the broth, ketchup and honey, and spoon over the top of the peaches.
  8. Bake for an additional 20 minutes. Let stand for at least 10 minutes before serving.
