How to make it

  • Preheat the oven to 350°F (180°C). Grease a 9 x 5 in (23 x 13 cm) loaf pan and set aside.
  • In a large bowl, mix together the all-purpose flour, whole wheat flour, rolled oats, brown sugar, baking powder and baking soda until evenly combined.
  • In a blender or food processor, combine the bananas, eggs, yogurt, vegetable oil and vanilla. Blend until smooth. Add to the dry mixture in the bowl and stir just until evenly mixed, then stir in the chocolate chips. Pour batter into the prepared loaf pan and bake for 50 to 60 minutes or until a toothpick poked into the middle of the loaf comes out clean. Let cool in the pan for about 5 minutes, then remove and let cool completely on a rack.

    Excellent! I meant to take a photo but the kids ate it so fast I didn't get a chance. I thought it might be dry, but it was surprisingly moist and very flavorful! It only took about 45 minutes in my oven. I used old-fashioned rolled oats instead of the quick/1-minute oats--and I didn't notice them in there so it worked out just fine. :)
