How to make it

  • On medium heat cook onion, bell pepper, garlic and butter until onion is limp stirring frequently.
  • Cook for 10 minutes then stir in rice and stir and additional 3 minutes.
  • Add broth and continue stirring.
  • Bring mixture to a boil then reduce heat to simmer.
  • Cover and cook 25 minutes.
  • Stir cheese and chopped parsley into rice mixture then let stand for 2 minutes.
