How to make it

  • Pit the dates and use your finger or the end of a spoon to bore out a little "canal" in the middle of each.
  • Pipe the mascarpone into a pastry bag, or a disposable plastic bag with one tip cut off.
  • Fill each date with mascarpone and arrange on serving tray.
  • Drizzle olive oil over dates, and top with a sprinkle of fleur de sel.
