Black Bean Salad

- 1 can black beans, drained and rinsed shopping list
- 1 cup corn (canned or frozen) shopping list
- grape or cherry tomatoes, halved (as many you like or have on hand) shopping list
- fresh salsa (see note below) shopping list
- red wine vinegar (just sprinkle on a little bit) shopping list
- olive oil (same as the vinegar) shopping list
- about 1 tsp. sugar shopping list
How to make it
- Mix all together and let sit a little while before serving.
- Note: This is best with an uncooked tomato salsa. The stuff you get in a jar in the supermarket will work too, but the flavor of a fresh salsa is really outstanding! I am fortunate to have a local store that makes a really tasty salsa, but if you can find a recipe that uses just tomato, onion, garlic, jalapeno, and lemon/lime juice, all blended in the blender, that would be a good way to go too.
