How to make it

  • Wipe kelp clean with a kitchen towel, make a few slashes in it with a knife
  • Add kelp to water and heat, uncovered, over high heat for 10 minutes. Do not let boil, if water starts to boil, add 1/4 cup cold water
  • Remove kelp after 10 minutes, bring stock to full boil
  • Add 1/4 cup cold water and add bonito flakes
  • Bring to a boil and immediately remove from heat and allow bonito flakes to settle on bottom (30 seconds - 1 minute)
  • Skim off any foam, strain through cheesecloth to remove bonito
