Minted Chicken Breasts with Cucumber Sauce

- 4 boneless, skinless chicken breasts shopping list
- 1/2 cup plain yogurt shopping list
- 1/2 tsp. salt shopping list
- 1/4 tsp. pepper shopping list
- 1/4 teaspoon cayenne pepper shopping list
- 1-1/2 cups plain yogurt shopping list
- 1 cucumber, peeled, seeded, and chopped shopping list
- 5 fresh mint leaves, minced shopping list
How to make it
- Sprinkle chicken with salt, pepper, and cayenne pepper, and spread on both sides with 1/2 cup yogurt. Cover and refrigerate for 1-2 hours. In a small bowl, combine 1 cup yogurt with cucumber and mint; mix well and refrigerate. When ready to eat, broil chicken 6" from heat for 4-5 minutes on each side until browned and thoroughly cooked. Serve with cucumber sauce
