Liver Lovers Rejoice Recipe
This dish is an easy one for those who enjoy the taste of beef livers. Feel free to zest it up if you wish. Portions are of course variable. Add as much or as little as you like.

Ingredients
  • 5 medium onions, sliced
  • 3 T shortening
  • 1 lb. beef liver slices
  • 2 T. all-purpose flour
  • 1 tsp. salt
  • 1/8 tsp. pepper
  • 3/4 c. water

Directions
  1. Cook onions in 1 T hot shortening until golden brown ; remove from pan
  2. Mix flour, salt and pepper together
  3. Dredge liver slices with flour mixture
  4. Fry in remaining shortening until brown on both sides
  5. Add onions and water
  6. Cover and simmer for 30 minutes or until liver is tender
  7. Add more water if necessary to prevent sticking

This the recipe that I use only I soak the liver in buttermilk for an hour prior to frying.Makes beef liver tast like calf's.Good post...Bob
