How to make it

  • Wash all the salt off of the sated pork.
  • Add salt pork, onion and garlic. Adjust water. Bring to a boil;
  • reduce heat and simmer covered until beans are tender, about 1-1/2 to 2 hours.
  • Add the salt * and adjust the seasoning if necessary, and cook the
  • beans, uncovered, for another 15 minutes or until cooked to the consistency you prefer.
  • Use in other dishes as directed or serve as is as a side dish.
  • * Note: Adding salt early in cooking the beans will prevent the beans from being tender
