Ingredients
  • 1 pound dried pinto beans; picked, rinsed & hydrated
  • 8 cups water; to cover 2-inches
  • 2 ounces cured salt, rinse off all salt
  • 1/4 cup onion, chopped coarsely
  • 2 each garlic, cloves; finely chopped
  • 2 teaspoons salt, added after skins are soft

Directions
  1. Wash all the salt off of the sated pork.
  2. Add salt pork, onion and garlic. Adjust water. Bring to a boil;
  3. reduce heat and simmer covered until beans are tender, about 1-1/2 to 2 hours.
  4. Add the salt * and adjust the seasoning if necessary, and cook the
  5. beans, uncovered, for another 15 minutes or until cooked to the consistency you prefer.
  6. Use in other dishes as directed or serve as is as a side dish.
  7. * Note: Adding salt early in cooking the beans will prevent the beans from being tender
