- 2 Cans of kidney beans, do not rinse shopping list
- 2 Med tomatoes shopping list
- 1 Med red onion shopping list
- 3 garlic cloves, diced shopping list
- 1/4inch ginger root, diced shopping list
- 2 tsp chili powder shopping list
- 1 tsp cumin powder shopping list
- 1 tsp coriander powder shopping list
- salt and fresh black pepper shopping list
- Small handful fresh coriander leaves shopping list
How to make it
- Dice ginger and garlic (or use pre prepared pastes) and pay fry with a touch of olive oil for 3-4 mins
- Add onions and chili powder, fry until onions are translucent
- Add diced tomatoes and beans and the rest of the spices. You may wish to taste the sauce here if you want more of a zing add more chili powder or garam masala.
- Also, if you want a more "liquidy" dish, and the tomatoes aren't adding enough liquid, add a touch of water mixed with tomatoe paste.
- Serve with Basmati rice or chapati
