Rajma Recipe
I have been told by the indian side of my family that this is very mild rajma, but everyone loves it!

Ingredients
  • 2 Cans of Kidney Beans, do not rinse
  • 2 Med Tomatoes
  • 1 Med Red onion
  • 3 garlic cloves, diced
  • 1/4inch ginger root, diced
  • 2 tsp Chili powder
  • 1 tsp Cumin powder
  • 1 tsp Coriander powder
  • Salt and fresh black pepper
  • Small handful fresh coriander leaves

Directions
  1. Dice ginger and garlic (or use pre prepared pastes) and pay fry with a touch of olive oil for 3-4 mins
  2. Add onions and chili powder, fry until onions are translucent
  3. Add diced tomatoes and beans and the rest of the spices. You may wish to taste the sauce here if you want more of a zing add more chili powder or garam masala.
  4. Also, if you want a more "liquidy" dish, and the tomatoes aren't adding enough liquid, add a touch of water mixed with tomatoe paste.
  5. Serve with Basmati rice or chapati

Great with mango chutney and brown rice. bit stodgey without any veg so i will add some next time. nice one!
