Lobster Quiche

- 1 - 9" pie shell, unbaked shopping list
- 2 T. finely chopped green onions shopping list
- 2 T. butter shopping list
- 1 1/4 c. diced, canned or fresh cooked lobster shopping list
- 1 T. fresh dill shopping list
- 4 eggs, slightly beaten shopping list
- 2 T. dry white wine shopping list
- 1/2 tsp. salt shopping list
- 1/4 tsp. white pepper shopping list
- 1 1/4 c. heavy cream, whipped shopping list
How to make it
- Prick bottom of pie shell with a fork and line with foil
- Fill it with beans or rice (for weight to prevent puffing during prebaking)
- Bake in preheated 400 F oven for 8 minutes
- Remove foil and item used for weight
- Bake an additional 3 minutes
- Reduce oven temperature to 375 F
- Meanwhile, saute' onions in butter
- Spread in the partly cooked pie shell
- Top with lobster and fresh dill
- Combine the eggs, wine, salt, pepper, and cream
- Pour into shell on top of lobster
- Bake for 25 - 30 minutes or until set
