How to make it

  • Prick bottom of pie shell with a fork and line with foil
  • Fill it with beans or rice (for weight to prevent puffing during prebaking)
  • Bake in preheated 400 F oven for 8 minutes
  • Remove foil and item used for weight
  • Bake an additional 3 minutes
  • Reduce oven temperature to 375 F
  • Meanwhile, saute' onions in butter
  • Spread in the partly cooked pie shell
  • Top with lobster and fresh dill
  • Combine the eggs, wine, salt, pepper, and cream
  • Pour into shell on top of lobster
  • Bake for 25 - 30 minutes or until set
