Lobster Quiche Recipe
OK OK. I know about every place has a quiche. I'm not really fond of them. However, this one snagged my taste buds and held them prisoner every time I placed a bite in my mouth.

Ingredients
  • 1 - 9" pie shell, unbaked
  • 2 T. finely chopped green onions
  • 2 T. butter
  • 1 1/4 c. diced, canned or fresh cooked lobster
  • 1 T. fresh dill
  • 4 eggs, slightly beaten
  • 2 T. dry white wine
  • 1/2 tsp. salt
  • 1/4 tsp. white pepper
  • 1 1/4 c. heavy cream, whipped

Directions
  1. Prick bottom of pie shell with a fork and line with foil
  2. Fill it with beans or rice (for weight to prevent puffing during prebaking)
  3. Bake in preheated 400 F oven for 8 minutes
  4. Remove foil and item used for weight
  5. Bake an additional 3 minutes
  6. Reduce oven temperature to 375 F
  7. Meanwhile, saute' onions in butter
  8. Spread in the partly cooked pie shell
  9. Top with lobster and fresh dill
  10. Combine the eggs, wine, salt, pepper, and cream
  11. Pour into shell on top of lobster
  12. Bake for 25 - 30 minutes or until set
