How to make it

  • Peel and boil beets until just tender.
  • Layer greens, sliced beets, shaved fennel, sectioned grapefruit and crumbled goat cheese. Add salt and pepper; drizzle with olive oil and red wine vinegar. Great with grilled meat or fish.
