Ingredients

4 cups mixed baby greens

4 peeled and cooked beets

shaved fennel

2 pink grapefruit, sectioned

crumbled goat cheese

red wine vinegar

olive oil

salt

cracked pepper

Directions

Peel and boil beets until just tender.

Layer greens, sliced beets, shaved fennel, sectioned grapefruit and crumbled goat cheese. Add salt and pepper; drizzle with olive oil and red wine vinegar. Great with grilled meat or fish.
