Ingredients
  • 3/4 pound ground sausage
  • 1/2 cup diced onion
  • 1/2 cup diced celery
  • 1/2 diced green pepper
  • 1 large ripe tomato
  • 8 eggs

Directions
  1. Brown crumbled sausage, onion, celery and pepper in a large skillet.
  2. Add diced tomato and simmer 10 minutes.
  3. Beat eggs until fluffy then add to skillet mixture.
  4. Season with salt and pepper then cook until desired doneness.
