Baked Romano Sole

- 1-2 pounds sole fillets shopping list
- 1/3 cup flour shopping list
- 1/8 teaspoon pepper shopping list
- 1/8 teaspoon ground nutmeg shopping list
- cayenne pepper to taste shopping list
- 4 teaspoons olive oil shopping list
- 1 clove garlic, crushed shopping list
- 1 can (28 oz) tomato puree shopping list
- 4 ounces mozzarella cheese, shredded shopping list
- 1 teaspoon minced fresh oregano shopping list
- 2 teaspoons minced fresh parsley shopping list
- 2 tablespoons freshly grated romano cheese shopping list
How to make it
- In a shallow bowl, combine flour, pepper, nutmeg and cayenne. Dredge fillets in seasoned flour, coating both sides.
- In a large skillet, heat 3 teaspoons oil. Add fillets and quickly brown over medium-high heat for 1 minute on each side. Drain on paper towels.
- Rub garlic clove and remaining oil on the surface of a large baking dish. Discard garlic clove. Spread 1 cup tomato puree evenly over bottom of dish. Arrange fillets on puree in one layer and sprinkle with mozzarella. Spoon remaining puree over mozzarella and sprinkle with oregano, parsley and Romano.
- Bake at 400° F. for 15 minutes, or until sauce bubbles.
