Ingredients
  • 1-2 pounds sole fillets
  • 1/3 cup flour
  • 1/8 teaspoon pepper
  • 1/8 teaspoon ground nutmeg
  • Cayenne pepper to taste
  • 4 teaspoons olive oil
  • 1 clove garlic, crushed
  • 1 can (28 oz) tomato puree
  • 4 ounces mozzarella cheese, shredded
  • 1 teaspoon minced fresh oregano
  • 2 teaspoons minced fresh parsley
  • 2 tablespoons freshly grated Romano cheese

Directions
  1. In a shallow bowl, combine flour, pepper, nutmeg and cayenne. Dredge fillets in seasoned flour, coating both sides.
  2. In a large skillet, heat 3 teaspoons oil. Add fillets and quickly brown over medium-high heat for 1 minute on each side. Drain on paper towels.
  3. Rub garlic clove and remaining oil on the surface of a large baking dish. Discard garlic clove. Spread 1 cup tomato puree evenly over bottom of dish. Arrange fillets on puree in one layer and sprinkle with mozzarella. Spoon remaining puree over mozzarella and sprinkle with oregano, parsley and Romano.
  4. Bake at 400° F. for 15 minutes, or until sauce bubbles.
