Sesame Rice Recipe
Another great stand-by of mine, that came from Moosewood Restaurant's "New Classics" cookbook. It's a simple recipe, but packed with flavours - an unbeatable combination that the Moosewood is extremely good at!

Ingredients
  • 1 cup brown rice
  • 1 1/2 tsps dark sesame oil
  • 1 1/2 cups water
  • 1/3 cup minced scallions (green onions)
  • 2 TBSPS toasted sesame seeds (NOTE: toast in a single layer on an ungreased baking tray at 350 F for 2 to 3 minutes, until fragrant and golden; better than buying pre-taosted, which may be somewhat stale)
  • 2 to 3 tsps soy sauce, to taste

Directions
  1. In a saucepan with a tight-fitting lid, toss the rice with 1/2 tsp of the sesame oil to coat the grains.
  2. Add the water, cover the pot, and bring to a boil, then reduce the heat and simmer until the rice is tender, about 40 - 45 minutes. (Brown rice takes longer to cook, but is well worth the end result; you could use a white rice instead, but I would suggest cutting back the amount of sesame, as white rice cannot substain the intense flavours.)
  3. Stir in the scallions (green onions), the toasted sesame seeds, and the remaining sesame oil, and soy sauce to taste.
