- 2 lb. sauerkraut shopping list
- 3 medium onions, chopped shopping list
- 2 T. bacon or pork fat shopping list
- 2 tart med. apples, peeled, cored and chopped shopping list
- 6 peppercorns shopping list
- 10 juniper berries (if available) or 1/4 c. gin shopping list
- 2 1/2 c. white wine shopping list
- 12 link sausages shopping list
- 6 slices of cooked ham, 1/4 inch thick shopping list
- 6 smoked pork chops or slices shopping list
- 6 brats or smoked sausage shopping list
How to make it
- Soak sauerkraut in cold water about 15 minutes
- Squeeze dry with hands
- Meanwhile saute' onions in fat until tender but not brown
- Add sauerkraut and toss with fork
- Cook for 5 minutes, stirring 2-3 times
- Add apples, peppercorns, and juniper berries
- Pour in white wine
- Cook slowly, covered for 1 hour
- Meanwhile, fry sausages
- Drain off fat and put on absorbent paper
- Add meats to sauerkraut
- Cook ,covered, for additional 30 minutes
- Discard peppercorns and juniper berries
- To serve, spoon out meats onto a dish. Pile sauerkraut in center of a large warmed platter. Arrange meats & sausages around or on top.
- This dish can be prepared beforehand and reheated.
- Serve with boiled potatoes and mustard
