Chouroute Garnie Recipe
"Warm up to this Alsatian masterpiece on a crisp autumn day." They weren't joking when they told me this. I loved it so well I thought I would share it with everyone.

Ingredients
  • 2 lb. sauerkraut
  • 3 medium onions, chopped
  • 2 T. bacon or pork fat
  • 2 tart med. apples, peeled, cored and chopped
  • 6 peppercorns
  • 10 juniper berries (if available) or 1/4 c. gin
  • 2 1/2 c. white wine
  • 12 link sausages
  • 6 slices of cooked ham, 1/4 inch thick
  • 6 smoked pork chops or slices
  • 6 brats or smoked sausage

Directions
  1. Soak sauerkraut in cold water about 15 minutes
  2. Squeeze dry with hands
  3. Meanwhile saute' onions in fat until tender but not brown
  4. Add sauerkraut and toss with fork
  5. Cook for 5 minutes, stirring 2-3 times
  6. Add apples, peppercorns, and juniper berries
  7. Pour in white wine
  8. Cook slowly, covered for 1 hour
  9. Meanwhile, fry sausages
  10. Drain off fat and put on absorbent paper
  11. Add meats to sauerkraut
  12. Cook ,covered, for additional 30 minutes
  13. Discard peppercorns and juniper berries
  14. To serve, spoon out meats onto a dish. Pile sauerkraut in center of a large warmed platter. Arrange meats & sausages around or on top.
  15. This dish can be prepared beforehand and reheated.
  16. Serve with boiled potatoes and mustard

What is a bouque garnie looking up soup recipes and it says add bouque garnie what is it and where would I get it I haven't a clue and I class myself as an intermediate cook, never heard of one
any help would be appreciated, I want to make homemade soup stocks. thanks all tyytjones@yahoo.ca
