How to make it

  • Soak sauerkraut in cold water about 15 minutes
  • Squeeze dry with hands
  • Meanwhile saute' onions in fat until tender but not brown
  • Add sauerkraut and toss with fork
  • Cook for 5 minutes, stirring 2-3 times
  • Add apples, peppercorns, and juniper berries
  • Pour in white wine
  • Cook slowly, covered for 1 hour
  • Meanwhile, fry sausages
  • Drain off fat and put on absorbent paper
  • Add meats to sauerkraut
  • Cook ,covered, for additional 30 minutes
  • Discard peppercorns and juniper berries
  • To serve, spoon out meats onto a dish. Pile sauerkraut in center of a large warmed platter. Arrange meats & sausages around or on top.
  • This dish can be prepared beforehand and reheated.
  • Serve with boiled potatoes and mustard

    what is a bouque garnie looking up soup recipes and it says add bouque garnie what is it and where would I get it I haven't a clue and I class myself as an intermediate cook, never heard of one
    any help would be appreciated, I want to make homemade soup stocks. thanks all
