How to make it

  • In a bowl, lightly scramble the eggs, and season with salt and pepper to taste. Dice ham and slice tomatoes.
  • Spray omelet pan with olive oil and preheat on medium.
  • Saute ham, mushroom and tomato until warm. Transfer to small plate.
  • Add eggs to omelet pan, and cook slowly. Omelets are like pancakes, patience is key.
  • As the edges firm, peel them up and allow uncooked egg to drain under them.
  • Spread cheese on one half of the omelet, add ham, mushroom, tomatoes and spinach.
  • Fold omelet in half, and leave on flame long enough for cheese to melt (about a minute).
  • Slide omelet onto plate and serve. You have a healthy breakfast in about 10 minutes, 15 if you make two.
