Better Than An Egg Macmuffin Veggie Omelet

- 2 eggs, or 1 whole egg and two egg whites shopping list
- 2 tablespoons shredded cheese shopping list
- 1 slice ham shopping list
- 4 grape tomatoes shopping list
- 1 tablespoon sliced baby portobello mushrooms shopping list
- 5 fresh baby spinach leaves shopping list
- Preparation shopping list
How to make it
- In a bowl, lightly scramble the eggs, and season with salt and pepper to taste. Dice ham and slice tomatoes.
- Spray omelet pan with olive oil and preheat on medium.
- Saute ham, mushroom and tomato until warm. Transfer to small plate.
- Add eggs to omelet pan, and cook slowly. Omelets are like pancakes, patience is key.
- As the edges firm, peel them up and allow uncooked egg to drain under them.
- Spread cheese on one half of the omelet, add ham, mushroom, tomatoes and spinach.
- Fold omelet in half, and leave on flame long enough for cheese to melt (about a minute).
- Slide omelet onto plate and serve. You have a healthy breakfast in about 10 minutes, 15 if you make two.
