Kimchi Cucumbers Polish 24 Hr Pickles Recipe
Old family hand-me-down recipe. Can be eaten in 24 hrs but tastes better the longer they stand. I double & triple the recipe and place them in a large glass jar in refrig.

Ingredients
  • 10 cucumbers, slender and small
  • 4 Tbsp. salt
  • 1 Tbsp.green onion, sliced finely
  • 1 Tbsp.chopped garlic
  • 1 tbsp.cayenne or powdered red pepper
  • 2 cups water

Directions
  1. Cut each cucumber into 2 or 3 pieces.
  2. Take a sharp knife and cut through sides of cucumber three times.
  3. Salt them and let them stand for an hour or more.
  4. Mix garlic, onion, 1 tsp salt and red pepper. Put this mixture into the slits in the cucumbers.
  5. Place them in a jar and pour water ( properly salted ) slowly to cover.
  6. Let it stand for a day or more before serving. ( I keep them in refrig.)
