How to make it

  • Preheat oven to 400F
  • Cut tomatoes length-wise
  • Place skin side down on a cookie sheet
  • Drizzle olive oil across tomatoes
  • Mix chopped basil and anchovy in a bowl with a 1 teaspoon of olive oil
  • Spread basil and anchovy mixture over the tomatoes
  • Salt and pepper to taste
  • Place in oven and roast until soft
