Roasted Tomatoes

- 8 roma tomatoes, cut length-wise shopping list
- 2 Tablespoons and 1 teaspoon olive oil shopping list
- 2 Tablespoons fresh basil, chopped shopping list
- 2 anchovy fillets, minced shopping list
- salt and pepper to taste shopping list
How to make it
- Preheat oven to 400F
- Cut tomatoes length-wise
- Place skin side down on a cookie sheet
- Drizzle olive oil across tomatoes
- Mix chopped basil and anchovy in a bowl with a 1 teaspoon of olive oil
- Spread basil and anchovy mixture over the tomatoes
- Salt and pepper to taste
- Place in oven and roast until soft
