How to make it

  • In large stew pot melt butter, stir in flour for the roux cooking 3 to 4 minutes. Make sure you stir constantly making a light color roux.
  • Add onions and celery cooking another 2 minutes or so.
  • Stir in milk and oyster liquor.
  • Season with salt, pepper and cayenne simmering for about 5 minutes.
  • Add oysters, garlic and parsley simmering for about 5 minutes or until oysters curl.
  • Remove from heat.
  • Serve with oyster crackers.
  • My prep and cook time are just estimates since have to put something in. Since I have plenty of time I sit down a lot when I cook.
