Oyster Stew From Ginger

- 1 stick unsalted butter shopping list
- 4 tbsp. plain flour shopping list
- 1 cup chopped green onion with tops (or scallions) shopping list
- 1/2 cup or so of chopped celery shopping list
- 2 cups whole milk shopping list
- 1 pint shucked oysters, reserving liquor shopping list
- sea salt and cayenne to taste shopping list
- fresh cracked pepper to taste shopping list
- 2 large cloves garlic minced shopping list
- 1/4 cup finely chopped Italian parsley shopping list
How to make it
- In large stew pot melt butter, stir in flour for the roux cooking 3 to 4 minutes. Make sure you stir constantly making a light color roux.
- Add onions and celery cooking another 2 minutes or so.
- Stir in milk and oyster liquor.
- Season with salt, pepper and cayenne simmering for about 5 minutes.
- Add oysters, garlic and parsley simmering for about 5 minutes or until oysters curl.
- Remove from heat.
- Serve with oyster crackers.
- My prep and cook time are just estimates since have to put something in. Since I have plenty of time I sit down a lot when I cook.
