We love oyster stew and it is really so easy.

Ingredients
  • 1 stick unsalted butter
  • 4 tbsp. plain flour
  • 1 cup chopped green onion with tops (or scallions)
  • 1/2 cup or so of chopped celery
  • 2 cups whole milk
  • 1 pint shucked oysters, reserving liquor
  • Sea salt and cayenne to taste
  • Fresh cracked pepper to taste
  • 2 large cloves garlic minced
  • 1/4 cup finely chopped Italian parsley

Directions
  1. In large stew pot melt butter, stir in flour for the roux cooking 3 to 4 minutes. Make sure you stir constantly making a light color roux.
  2. Add onions and celery cooking another 2 minutes or so.
  3. Stir in milk and oyster liquor.
  4. Season with salt, pepper and cayenne simmering for about 5 minutes.
  5. Add oysters, garlic and parsley simmering for about 5 minutes or until oysters curl.
  6. Remove from heat.
  7. Serve with oyster crackers.
  8. My prep and cook time are just estimates since have to put something in. Since I have plenty of time I sit down a lot when I cook.
