Cucumber Relish Recipe Tomatobaron / All my dishes

Best used as topping for my crabcakes. I especially like it on a crabcake sandwich.

Ingredients
  • 2 Roma tomatoes
  • 2 Medium cucumbers
  • 2 Medium sweet peppers (I like an orange and yellow one for color contrast)
  • 1 Tb Red pepper flakes
  • 1 1/2 cups Balsamic vinagarette

Directions
  1. Dice tomatoes, shallots, cucumbers, and peppers
  2. Add veggies, pepper flakes and balsamic dressing to bowl
  3. Toss to coat evenly
  4. Allow mixture to marinate for half an hour stirring every ten minutes to distribute flavor
  5. Quickly strain and return to bowl allow some of the balsamic mixture to remain
  6. Serve over crabcakes
