Yummy Fall Pork Roast Recipe

Yummy Fall Pork Roast Recipe
Found this in a Garden Club cookbook and did my own thing. Makes a nice sauce as it cooks. Great for a fall dinner. Serve with mashed potatoes, rice, or just add potatoes or veggies the last hour of cooking.

Ingredients
  • 1- 4 lb pork roast
  • 1 1/2 tsp salt
  • 1 1/2 tsp pepper
  • 1/2 c. brown sugar
  • 2 c. tomatoes
  • 2 onions diced
  • 1/2 c. catsup
  • 1/2 c. water

Directions
  1. Mix the salt, pepper and brown sugar
  2. Rub into the meat
  3. Place meat in roasting pan.
  4. Mix the tomatoes, onions, catsup and water.
  5. Pour a little over the meat and in pan.
  6. Bake at 350 degrees for about 2 hours basting occasionally with the rest of the catsup mixture.
  7. I cook mine on the countertop in a covered Nesco roaster between 250 and 325 degrees for about 2 1/2 hours. It's got to cook slowly so it's nice and tender.
  8. You can add potatoes or other veggies the last hour if you like.
