Ingredients
  • Chicken
  • 6 split boneless chicken breasts
  • 6 mild whole green chiles
  • 6 slices Monterey Jack Cheese
  • 1 Chinese panko bread crumbs
  • 1 or 2 eggs (beaten for dipping)
  • Sauce:
  • 1/2 C. picante sauce
  • 1/2 C. chopped green chiles
  • 1/2 C. shredded Monterey Jack Cheese

Directions
  1. Pound out chicken breasts. Salt and pepper to taste. On each chicken breast lay a split whole green chile flat. Put a slice of Monterey Jack cheese onto of chile. Roll up chicken and dip in egg then roll in breadcrumbs. Bake at ~375 for 40 minutes or until done.
  2. Mix the sauce ingredients together and cook on medium heat-- pour sauce over chicken when serving.
