Ingredients
  • 600 gr beef (or young beef)
  • 30 gr. onion
  • 1 small hot pepper
  • 1 bunch parsley
  • salt
  • pepper
  • 100 grams kaymak from Uzice

Directions
  1. Grind or chop everything very fine.
  2. Work all ingredients into a meat mixture.
  3. Chill for a couple of hours in the refrigerator.
  4. Form into small link sausage shaped pieces by hand or with the utensil for making sausages and grill, turning all the time, brushing them with oil.
  5. After grilling pour over melted kaymak from Uzice.
  6. Serve with spring or chopped onions and optionally with roasted green peppers, radishes, pita, tomatoes, whatever.

Since I suspect most of you are nowhere near Uzice, you may be interested that kaymak is a dairy product popular in this region of Europe. I just found a recipe for it on a Macedonian website here: http://faq.macedonia.org/cuisine/kajmak.html

Some versions of cevapcici or pljeskavica (a patty-shaped meat dish of the same order as cevapcici) are stuffed with kajmak, which gets deliciously melty in the center.
