How to make it

  • Grind or chop everything very fine.
  • Work all ingredients into a meat mixture.
  • Chill for a couple of hours in the refrigerator.
  • Form into small link sausage shaped pieces by hand or with the utensil for making sausages and grill, turning all the time, brushing them with oil.
  • After grilling pour over melted kaymak from Uzice.
  • Serve with spring or chopped onions and optionally with roasted green peppers, radishes, pita, tomatoes, whatever.

    Since I suspect most of you are nowhere near Uzice, you may be interested that kaymak is a dairy product popular in this region of Europe. I just found a recipe for it on a Macedonian website here: http://faq.macedonia.org/cuisine/kajmak.html

    Some versions of cevapcici or pljeskavica (a patty-shaped meat dish of the same order as cevapcici) are stuffed with kajmak, which gets deliciously melty in the center.
