Ingredients

How to make it

  • Combine flour, soda, sugar and spices.
  • Combine egg, shortening, pumpkin and milk.
  • Add to flour mixture beating until smooth.
  • Bake on hot lightly greased griddle turning only once.
  • Serve hot with butter and syrup or powdered sugar.

    I make there with about the same ingredients, only use Bisquick. This is the absolute favorite in our household. My children have had these every 1st day of the school year. One in college and one in jr. high school. They never tire of them!!!!!!

    This pumpkin pancake recipe looks quite similar to a recipe which I have. The one I have came from an issue of a parenting magazine back in the mid 80's. Anyone who hasn't had pumpkin pancakes is missing a great breakfast. They are fabulous with warm maple syrup on a cold winter morning.
