Ingredients
  • 4 boneless skinless chicken breasts (cut into strips)
  • 1/2 cup flour
  • 2 T olive oil
  • 1 medium onion
  • 4 cloves garlic
  • 3/4 c sundried tomatoes, julienne cut
  • 2 c artichoke hearts, quartererd (15 oz can)
  • 1 1/2 c white wine or chicken broth
  • 1/4 c shopped basil
  • 1/4 cup toasted pine nuts
  • salt/pepper to taste

Directions
  1. place chicken pieces in flour. Lightly coat and set aside
  2. Boil water
  3. heat olive oil in large skillet
  4. add onion and garlic, saute for approx 1 minute
  5. add chicken (shake off excess flour) and saute until browned.
  6. Add pasta to boiling water.
  7. Add sundried tomatoes, artichokes and wine/broth to skillet.
  8. stir well, cover and simmer on low heat approx 10 minutes, then add basil and pinenuts.
  9. Drain pasta.
  10. Serve chicken and sauce over pasta.
